Nestled on the northern edge of the New Forest in Hampshire, Lyburn Farm has been family-run for over 50 years, evolving from a traditional dairy farm into a renowned artisan cheesemaker. Responding to changing markets, the Smales family turned their passion for farming into a sustainable cheesemaking enterprise, using milk from their own herd of cows to produce an exceptional range of handcrafted cheeses.

 

Lyburn Farm’s award-winning selection includes the smooth and creamy Lyburn Gold, the firm and nutty Winchester, and the intensely flavoured Old Winchester, a Gouda-inspired, aged cheese with a rich depth of flavour. They also produce unique varieties, such as the garlic and nettle-infused Lyburn Gold and Stoney Cross, a mould-ripened cheese reminiscent of French Tomme de Savoie.

 

Sustainability is at the heart of Lyburn Farm’s operations, with solar-powered energy generation and a low-carbon cheesemaking process that eliminates unnecessary refrigeration and transport. Every cheese is crafted with a commitment to quality, tradition, and environmental responsibility.
