Handcrafted at Ulceby Grange Farm on the edge of the Lincolnshire Wolds, Lincolnshire Poacher Cheese is a true artisan masterpiece, blending the rich depth of West Country Cheddar with the nutty complexity of Gruyère. Produced by the Jones family since 1992, this award-winning cheese was the vision of Simon Jones, who, after studying agriculture, set out to reinvent British cheesemaking with a unique and distinctive flavour.

 

Made using unpasteurised milk from the farm’s own Holstein cows, Lincolnshire Poacher develops its complex, slightly sweet, and nutty character over 12 to 24 months of careful maturation. Each wheel is crafted with precision and passion, ensuring a consistently rich and full-bodied taste that varies subtly with the changing seasons.

 

As demand for this exceptional cheese grew, the farm expanded in 1995, and Simon’s brother, Tim Jones, later joined to help bring Lincolnshire Poacher to an even wider audience. Today, the range includes Vintage, Double Barrel, Smoked, and Lincolnshire Red, each offering a unique expression of the farm’s dedication to quality and craftsmanship.
